Personalized Cupcakes for a Conference

The Kogod School of Business hosted the annual CUIBE spring meeting this past weekend. For an extra special treat, we had 2 stamps made to personalize the cupcakes. Below are Red Velvet and Vanilla Cupcakes, both with my favorite Vanilla Mascarpone Cream Cheese Frosting. One person even commented, "Your icing is amazing. If I could marry it, I would."

Giant Cupcake Class with Courtney Clark

This year at the National Capital Area Cake Show in Fairfax Virginia, I was so excited to take a class with one of my fave Food Network Cake Challenge stars, Courtney Clark from Cake Nouveau!
Courtney was so nice and she let us in on so many of her tricks when working with fondant - I feel like I learned so much in this short three hour class. I also think this giant cupcake cake is really cute and I can't wait to make more!

Batter Up! Cupcakes to Celebrate the Start of Spring!

I made these cupcakes for a co-workers friends birthday - Because spring is literally just around the corner (tomorrow) I was asked to make my red velvet cupcakes with a baseball as the decoration and because St. Paddy's Day was this week, I did a chocolate cupcake with Bailey's Irish Cream Buttercream frosting.

Happy St. Patricks Day!

Here are three dozen cupcakes I did for St. Paddy's Day! The first two were for my colleagues little boy who had to bring something to his preschools celebration. To make these more with more kid appeal, I used extra frosting! There was Vanilla Cupcakes dyed green with Vanilla Frosting and a Chocolate Cupcake with Mint Cookies and Cream Frosting. Of course shamrock sprinkles and fondant cutouts were the perfect embellishment.

The third dozen were for another colleague at work - her favorite are the Vegan Chocolate Cupcakes with Mint Cookies and Cream Frosting.

Cosmopolitan Cupcakes for a 50th Bday Party

Here are another round of Cosmo Cupcakes done for a 50th Birthday Party. I was contacted through Facebook from a former student from when I worked at PSUMA - Cosmos are her mothers fave drink so we figured these cupcakes would be perfect. At the party, they were going to be set up in martini glasses for the guests.

Each cupcake was topped with a fondant lime slice and a sprinkling of sugar.


The cupcake is a lime flavored cake and the frosting is cream cheese based. To make the frosting taste like a Cosmo I mix in cranberry juice concentrate, lime juice, vodka, and a touch of Grand Marnier.
This time I brushed some of the liquid Cosmo mixture on the warm cupcakes to add some extra flavor and moisture!

3 Diaper Cakes in One Day!

I haven't had to make a diaper cake in a long time - Now I had to make three in one day! Here are two cakes for a boy and one for a girl. The last picture shows all the items put into the cake - you don't necessarily see these when the cake is finished!

Cupcakes for a 4 Year Old

I was recently given the challenge to create Princess and the Frog themed cupcakes for a little girl turning 4 this weekend. I say challenge because that is what it turned into when I couldn't find any little Princess Tiana garb anywhere! Disney...get on that!

I had to get creative.

Below are 2 dozen cupcakes - The first are chocolate with vanilla frosting and the second are vanilla filled with lemon curd and topped with vanilla frosting. To decorate I used the purple and green colors as well as found rubber stamps of a frog and of a princess crown. I also created a few lily pads complete with their own white flower.

The pictures aren't the greatest - I forgot my camera and had to use my phone.

I hope she likes them!
