Triple "J" Birthday Party!

I was asked to make cupcakes for the birthday celebration of three August birthdays today!  I chose to do my favorite classic red velvet cupcake with vanilla mascarpone cream cheese frosting, a mocha cupcake with vanilla mascarpone cream cheese frosting, and a new flavor - Banana Split!  My goal was to find a banana cupcake recipe that wouldn't taste like a muffin.  The recipe I found was pretty good - light, fluffy and super moist.  I topped the banana cupcake with fresh strawberry Swiss meringue frosting, chocolate syrup and a cherry.  Yummy!
