Holiday Cake Bites

This year I made Cake Bites (AKA Cake Balls) for my holidays gifts at work. Cake Bites are actually cake and frosting dipped into chocolate and decorated. Most directions on-line have you use cake mix and canned frosting - but not me. I baked these cakes fresh for these gifts and made homemade cream cheese frosting. These are also a great way to use cake scraps if you bake a lot of cakes.

After baking and cooling your cakes completely, add them to a food processor and pulse until finely ground. Combine cake with frosting and roll into small balls. Place in your refrigerator or freezer until firm then dip into chocolate. Cool completely again and then decorate!

Chocolate Covered Candy Cane
Vanilla cake baked with pieces of candy cane in the batter then dipped into semi sweet chocolate and topped with a piece of candy cane.

Red Velvet
Red Velvet cake dipped into white chocolate and then small white non-perils.

Holiday Cupcake Time

Cupcakes make great hostess gifts - as in the case below. This dozen Red Velvet cupcakes with Cream Cheese frosting were given to the hostess of a lovely dinner party this past weekend. Accompanying the cupcakes was a bottle of Cupcake Vineyards Chardonnay which was rather delicious!

Holiday Staff Appreciation Party

I thought it would be fun to include cupcakes in our Holiday Staff Appreciation party this year. Instead of me decorating them, I let the student staff do the decorating. I made 4 dozen cupcakes (Red Velvet and Gingerbread) alonge with two types of vanilla frosting (buttercream and cream cheese). I also brought a whole bunch of holiday themed decorations. Each person was able to take away 4 cupcakes in a box as well as eat them at the party. Any leftovers were decorated and offered up to the staff in the building - getting rid of them took all but a minute! Here is a collage of their creations:
