Vegan Chocolate Cupcakes

I made these Vegan Chocolate cupcakes with Cookies and Cream Frosting in "Fall" colors for a co-worker this weekend. Ever since I tried these out they have been requested time and time again. The chocolate cake is so moist which is why I believe everyone loves them. There are no dairy products used when making this cupcake - even the frosting uses Tofutti - a cream cheese substitute.
