A colleague of mine in the business school is leaving this week for a new job. She loves the chocolate and raspberry flavor combination so I tried out a new devils food cupcake recipe (from the Martha book) and used my fresh Italian buttercream frosting. I made 2 dozen of these as cupcakes and the cake. She also loves Tiffanys blue so I made 2 dozen vanilla cupcakes and tinted the vanilla buttercream the signature color and I attempted to make a Tiffanys gift box out of cake. This was my first time doing a box shape and it was harder than I thought. I had no idea how to get those crisp box like edges. Also, humidity is not a friend of buttercream and marshmallow fondant, so some sagging started to occur. Thanks for already made gumpast flowers to hide the flaws!
There's not too much to say in this blog post except that these cupcakes are delicious. I used the Meyer Lemon recipe from the Martha Stewart Cupcakes book but with regular lemons. I topped them with my favorite cream cheese/marscapone cheese frosting but instead of vanilla used lemon juice and zest. The cupcake recipe uses cream cheese instead of milk/cream - it makes the cupcake really rich!
This past weekend my parents were in town for the 4th of July holiday. My father mentioned that he enjoys carrot cake so I decided to pull out my new Martha Stewart Cupcake book. The carrot cupcakes were moist and delicious. I did not include the nuts but did include the golden raisins. The frosting was my favorite Vanilla Marscapone and Cream Cheese frosting. I topped each with a candied walnut.
