Tiffanys Inspired Cake

This past Saturday I took Cake Decorating 201 at L'Academie de Cuisine. I thought I would try to build upon my fondant skills. We were provided an 8 inch cake and we made our own marshmallow fondant and buttercream frosting. I like the recipe we used for the fondant. It was a lot easier to work with then the one I used last time - It may have also had to do with the fact I was in a classroom setting with an instructor so I was not afraid to try new things with it.

I did not go in thinking of doing a Tiffanys blue - It just turned out that color and immediately I thought of my favorite little blue box with white ribbon. And of course, since I love polka dots...

I can't say I learned too many new skills in this class. There were over 30 people and there was not a lot of individual attention paid to the attendees. I am happy that I left with the fondant recipe because I now have a recipe that makes great tasting fondant and one that I can make decorations with.

St. Patricks Day Cupcakes

Here are a dozen chocolate cupcakes. Six are topped with mint flavored butter cream frosting and the other six have a vanilla cream filling and are topped with a semi-sweet chocolate ganache with white chocolate writing.

Baby Shower Cupcakes

Here are 2 dozen cupcakes done for a baby girl shower. The first are red velvet with a vanilla butter cream frosting and the second are chocolate with chocolate butter cream frosting. Both were topped with pastel colored fondant blossoms.

New Diaper Cakes

It's a busy month for Baby Showers. Here are two of my latest Diaper Cakes - Both for baby girls. Each are 50 or less diapers and contain plenty of onesies, wash cloths, bibs, BPA free bottles and binkies, bottle brushes, and Johnson and Johnson baby bath products.

Cosmopolitan Cupcakes

I've been wanting to do a Cosmopolitan Cupcake (based on my favorite drink) for a long time. Since Trader Joes was out of key limes this weekend, I decided to get some regular limes and try to develop this new cupcake using elements of the key lime recipe.

The result - A Lime Cupcake with Cosmo Frosting

I used the same cake recipe - it's light and airy, almost like angel food cake - there are no yolks in this batter. For the Cosmo part I placed half a bag of frozen cranberries, water, and sugar on the stove until all the cranberries popped. Once that happened I added vodka, triple sec, and lime juice. Once everything thickened, I smooshed the cranberries and then strained them leaving the juice to cool. I added this to my frosting (a cream cheese base). I also tried making a filling like the key lime cupcakes - but both my husband and I liked them better without!
