Marshmallow Fondant

I made my first batch of marshmallow fondant (MMF). It was a little tricky, not to mention sticky, but I think with some practice it will get easier. It tastes really good and when you cut the cake, it slices really well. It is not as bright white as the store bought fondant is, but that is only noticeable next to a cake with that.

To make the fondant, I used 1 bag of mini marshmallows and a 2 tablespoons of water. I put this over a double boiler and kept stirring. It took quite a bit of time to completely melt. I may try the microwave next time. I then added the melted marshmallow to 8 cups of powdered sugar in my stand mixer. Most people knead this mixture by hand, but while searching the internet for recipes, I found one woman using her kitchen aid with success. Just be sure to use the dough hook. I added a bit more water and a tablespoon of vanilla extract. Once the mixture was combined well, I turned it out onto a sugared surface and kneaded it for a minute or two. Making sure my hands were coated well with crisco. Then, I shaped the fondant into a log, coated it with crisco and wrapped with plastic wrap. The MMF went into the refrigerator overnight to set. The next day, I pulled it from the refrigerator 30 minutes prior to use to come to room temp. It took a little working with it to warm it up, but for the most part was very easy to use and rolled out nicely. Here is the finished product:

The yellow draping and covered board were done with left over store bought fondant.

The "Green" Diaper Cake

Here is my latest diaper cake for a member of our family. Again, it's a cake for a little boy (where are all the ladies?).

This "going green" diaper cake features the following:
-Over 75 Pampers Swaddlers (Size 1)
-1 organic cotton blanket (the frog head is part of that blanket)
-1 organic bath robe (inside)
-Burts Bees baby products
-1 Sleeper (inside)
-1 Bottle (inside)
-1 Bottle Brush
-3 Pacifiers
